Simple Vanilla Cupcakes

Equipment

  • 1 Electric mixer
  • 2 Mixing Bowls
  • 1 Cupcake pan

Ingredients

  • 1 + ¼ cups all-purpose flour
  • 1 + ¼ tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter
  • ¾ cup sugar
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
  • ½ cup buttermilk or plan kefir room temperature
  • VANILLA FROSTING INGREDIENTS
  • 1+1/2 cups heavying wiping cream cold
  • 1 package 8 oz cream cheese softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  • Preheat over to 350 degrees. Line the cupcake pan with cupcake liners.
  • In a mixing bowl, whisk flour, baking powder, and salt.
  • Using a second mixing bowl, combine butter and sugar. Then add eggs and vanilla. Then add buttermilk and flour.
  • Once all ingredients are combined, add the mixture to the cupcake pan.
  • Bake for about 20 mins. Check the cupcakes using a toothpick. Insert a toothpick into the center if it comes out clean, they are ready. If not, bake for another 2-3 minutes.
  • Frosting can be prepared while the cupcakes are baking.
  • Mix the heavy whipping cream using the electric mixer until it is fluffy and spreadable, about 1-2 minutes.
  • In a separate bowl mix cream cheese, powdered sugar, and vanilla.
  • Then fold in the fluffy heaving whipping cream.
  • Once cupcakes are cooled spread the frosting on the top using a spatula or a piping bag.
  • Enjoy! 🙂

Notes

Optional: add a garnish of your choice. Sprinkles are great for birthdays and fruit with a mint leaf for a spring time brunch. Enjoy!
