Simple Vanilla Cupcakes

Equipment
- 1 Electric mixer
- 2 Mixing Bowls
- 1 Cupcake pan
Ingredients
- 1 + ¼ cups all-purpose flour
- 1 + ¼ tsp baking powder
- ½ tsp salt
- ½ cup unsalted butter
- ¾ cup sugar
- 2 large eggs room temperature
- 2 tsp vanilla extract
- ½ cup buttermilk or plan kefir room temperature
- VANILLA FROSTING INGREDIENTS
- 1+1/2 cups heavying wiping cream cold
- 1 package 8 oz cream cheese softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat over to 350 degrees. Line the cupcake pan with cupcake liners.
- In a mixing bowl, whisk flour, baking powder, and salt.
- Using a second mixing bowl, combine butter and sugar. Then add eggs and vanilla. Then add buttermilk and flour.
- Once all ingredients are combined, add the mixture to the cupcake pan.
- Bake for about 20 mins. Check the cupcakes using a toothpick. Insert a toothpick into the center if it comes out clean, they are ready. If not, bake for another 2-3 minutes.
- Frosting can be prepared while the cupcakes are baking.
- Mix the heavy whipping cream using the electric mixer until it is fluffy and spreadable, about 1-2 minutes.
- In a separate bowl mix cream cheese, powdered sugar, and vanilla.
- Then fold in the fluffy heaving whipping cream.
- Once cupcakes are cooled spread the frosting on the top using a spatula or a piping bag.

Notes
Optional: add a garnish of your choice. Sprinkles are great for birthdays and fruit with a mint leaf for a spring time brunch. Enjoy!
