Ingredients

  • 2 cups Greek Yogurt
  • 1 large English Cucumber
  • 1 tsp Salt
  • 4 Garlic Cloves
  • ½ Lemon
  • 2 tbsp. Dill
  • 1 tbsp. Mint
  • Add pepper to taste

Instructions

  • Peel the cucumber, then grate it. Once the cucumber is grated, mix in a pinch of salt.
  • Let the cucumber sit for about 12 minutes, allowing the salt to absorb some of the water. Scoop the cucumber onto cheesecloth or paper towel and squeeze out the remainder of the water from the cucumber.
  • Add 2 cups of Greek yogurt to another bowl and the cucumber.
  • Mince four garlic cloves, and finely chop the mint and dill. Combine all ingredients.
  • Add 1/2 fresh squeezed lemon.
  • Add salt and pepper to taste.
  • Once completed, cover and let sit in the refrigerator for 3 to 4 hours. This step allows the flavors to develop.
  • When it is ready to serve, add dill for some garnish and a drizzle of extra virgin olive oil.

Notes

  • It is best to use good quality yogurt with no added sugar.
  • You can serve this with fresh bread or raw vegetables; also great with grilled chicken and salads.
